I love using my bbq when it’s cold outside: you can grill your food without freezing to death and afterwards you can toss in some logs and have a cosy bonfire. Today I’m grilling corn as a wintery snack but you also can serve it as a delicious side dish for a juicy t-bone steak.
Ingredients for two servings:
100 gr butter
5 sprigs of fresh thyme
1 Ts of red pepper berries
salt and pepper
Before you start, take the butter out of the fridge until it gets mouldable.
Cut up the shallot and strip the leaves of two sprigs of fresh thyme. Put the shredded shallot, the red pepper berries, the fresh thyme leaves and the butter in a bowl, season with salt and pepper and mix it with a fork.
Season the corn with salt and pepper and put them on a medium hot grill, you will have to grill the corn for about 30 minutes. Spread the corn with the prepared butter while turning them regularly, so that you get an even golden glaze. Put the remaining sprigs of thyme on top of the corn while grilling them for the last 10 minutes for extra flavour.
